Are Black Fungus and Wood Ear the Same?
In short: no, they aren't the same.
The reason for the confusion is due to their similar shape and growth in tropical and temperate climates. Additionally, they are both used in different types of eastern cuisine for their nutritional properties—which are largely the same—and neutral taste. Despite this, there are some slight technical differences between them.
Differences Between Black Fungus and Wood Ear
Nutritionally, these mushrooms are extremely similar, offering great sources of protein, good carbohydrates, B vitamins, and numerous minerals. Whatever slight differences in nutrients that they may have are negligible, and this is also true for their health benefits. In fact, the health benefits of most functional mushroom species are extremely similar.
As for visual differences, Wood Ear mushrooms are thin, curled, light- or dark-brown mushrooms that resemble the ears of the elderly, hence their name. On the other hand, Black Fungus is slightly similar in shape, though not as ear-shaped, but is less fleshy in appearance and much darker in colour.
Should You Use Wood Ear or Black Fungus?
In truth, there is no right answer to this question. It largely depends on personal preference and whichever option is more easily available to you. Both will likely come dried and will need to be reconstituted in water, but neither is superior to the other. If you're a picky eater, it might be beneficial to know that Black Fungus is coarser than Wood Ear mushrooms but has a very neutral taste that will likely absorb the flavour of whatever it is that you're cooking.
